When I got the call that I was going to have a box of fruit delivered to me at the office, I was so, very curious. I mean, while I like fruit, everyone who knows me knows that I would have preferred it were a box full of candy bars! But I guess, that’s why the swell folk at Fruitful Day came up with the idea of promoting a healthy snack – throw out the candy bars and bring in this gluten-free, healthy snack option. So yes, I was very curious.
Once the box arrived, it was full of so-much-fruit and all so fresh! It was SO inviting, I had to dig into the watermelon right away – and was thinking “who the heck would want a candy bar?” Well played, Fruitful Day…well played! I had to stop myself from eating most of it, had to share with Nancy after all!
Friday morning came around and I still had a lot of fruit with me so I drove over to Nancy’s to deliver her share of fruit and we kinda stared at the box and each other for a while. Finally, we decided we were going to use some of it right away and make ourselves a delicious breakfast. Now, Nancy and I don’t claim to be culinary geniuses of any kind but we think we did pretty, darn well and thought to share.
If you have fruit around the house, here are some super easy, fun ideas!
1. Blueberry Pancakes. Mix a cup of flour, one cup of almond milk, one egg and a handful of blueberries (save a few for the topping after). You can add chocolate chips to these babies too or just use some maple syrup like we did. Quick and easy. (This measurement makes 4 good sized pancakes).
2. Blueberry Banana Oats Smoothie. We truly didn’t measure anything. Just used our best judgement. Blend together milk, yogurt, blueberries, banana and chia seeds. So very tasty (and healthy!) & 3. A simple parfait. Take a glass, toss in some granola and then yogurt and more granola and more yogurt – go as high as you wanted to go – we stopped fairly quickly as we had so much other stuff to eat. Top with the chopped fruit of your choice (we went with banana and peaches). For a good granola, we suggest Melange – she makes a deliciously perfect combination of mixed nuts, pure nut butter, rolled oats, chia seeds, sesame seeds, honey, banana, ground ginger, coconut oil, assorted dry fruit, bee pollen and desiccated coconut. Trust me, this stuff is worth a try, costs AED150 and will be home delivered to you in that delightful jar (pictured with the pancake mix).
4. And when you run out of ideas, cut up fruit you like, put it on a pretty plate, and go wild. Pretty plating actually helps me eat anything healthy. It’s all in the presentation, I think. Judge away!
In just a little while, we had a most fabulous and mostly guilt-free feast of a breakfast.
