There are a couple of things that are linked to your time in a place. It could be a place you have lived in or even a place you just visited – some things just stick. One of my things from when I lived in Minnesota was Coconut Cream Pie. No matter what was going on in life (when you’re in college, things can get rough and crazy life-changing) a bit of coconut cream pie would some how just help. Every trip I make back to the mid-west, I always make it a point to get a slice.
There was one trip a couple of summers ago, when I was in Wisconsin, there was no time to find a diner or a pie shop. It was one of my last days in the states and I was kicking up a fuss about how I couldn’t believe that I’d have to leave without pie. I was spending the day with my most handsome friend Todd who said he’d bake me a pie! It wasn’t quite coconut cream pie but it was close and it would do the trick, he promised.
Enter – his great grandma Ruby’s most delightful coconut pie. So quick and easy. The best part is that you can make this in a blender. Turns out that great grandma Ruby not only loved this pie but she also sang, played the guitar and the uke – basically making me her, but from eons ago! This now would explain why my fashion sense is considered “grandma chic” by some friends!

While coconut may not be the first thing you think of for Christmas, it is something I always relate to this season. Coconut with a dollop of freshly whipped cream is a holiday party for the soul!
